SCHLOSS Roxburghe is looking for a passionate and experienced Restaurant Manager to support the F&B Manager with the day-to-day running of the F&B operation. The Restaurant Manager will work closely alongside the Executive Head Chef to deliver a high quality and smooth-running service. They will assist with creating and ensuring an exceptional food and beverage experience for our guests which exceeds expectations and maintains service standards with a continuous guest centric focus.
This is a full-time position based on an average 40 hours a week. Availability to work morning, evenings and weekends is essential. Competitive annual salary from £26k, based on experience.

Your key responsibilities.

You will be responsible for all the F&B activities within the hotel under the guidance of the F&B Manager, including preparation, service, staff guidance and cost control
You are responsible for the welcome and personal care of the guests, ensuring a consistent luxury and personalised guest experience
Lead and inspire the F&B team to make sure they exceed in their roles, through induction, training, management, empowerment, and development
Promotes self-initiative and self-responsible action of employees. Responsible for continuously improving employee satisfaction
Manage guest recovery situations promptly and effectively
Assist with the scheduling, time keeping and attendance for the department
Keep up to date on the volume of business through occupancy levels and event forecast, plans accordingly, responds to daily changes and prepares rotas and holiday plans
You will be responsible for the achievement of set financial targets and KPI’s
You will contribute to ideas and initiatives to drive innovation in the department You will play an active role in the creation of the F&B business plans, setting budgets and drives innovation in the department
Responsible for the welcome and personal care of the guests
Control cash handling and cash up procedures, ensuring that any queries are rectified with accounts in a timely manner
Ensure quality standards are achieved consistently regarding food, set up and presentation
Ensures the careful handling of complaints and accidents, ensure first aid training is up to date
Support with training and implementation of HACCP, COSHH and fire procedures
Give regular feedback, recognition, and reviews to team members
Actively contributes to the creation of departments business plan, setting budgets and drives innovation in the department
Takeover of manager on duty (MOD) responsibilities, when necessary (service recovery and fire panel alarms), to represent the management and assist with guest situations

The kind of person we are looking for.

Proven experience 2+ years within the luxury hospitality industry required
Supervisory or management experience essential, preferably in a comparable position and F&B environment
You will have good knowledge in wine, spirits and cocktails, preferably a WSET qualification 2 or above
You are enthusiastic and have a positive personality with the ability to build genuine and trusting relationships
You have a passion for delivering exceptional guest service
You have proven organisational and leadership qualities
You have excellent communication skills, both verbal and written with the ability to communicate effectively with people at all levels
You are confident in handling guest complaints and colleague management
